Chocolate Coated Coconut Balls

These chocolate-coconut energy balls are the perfect after dinner treat!

Recipe makes 16 coconut balls

"Probably one of my most creative recipes to date!! A creamy coconut ball, frozen and then dipped in melted chocolate!"

Ingredients: 100g of desiccated coconut 50ml of coconut milk 1 serving of vanilla protein 1 tbsp of golden syrup 2 tbsp of coconut oil 150g of milk chocolate chips ___ Method: Place first five ingredients in a food processor and blend Once blended, shape the mixture into 16 evenly sized balls Freeze the balls for 30+ mins Remove the balls from the freezer and melt the choc chips in the microwave Stick each ball onto the end of a toothpick, or something similar, before dipping the balls in the melted chocolate The balls will still be cold, so the melted chocolate will solidify around the balls almost immediately
