Fried Noodles with Chicken & Egg

This lovely bit of grub is great for when you're feeling like healthy take out at home!

"Stir fry is a simple, quick and easy way to satisfy cravings while staying under your calorie budget! Take the take-out home with this delicious recipe."

Ingredients:

1 tbsp + 1 tsp of Olive oil 400g of chicken breast - butterflied then cut into strips 2 cloves of garlic - sliced 1 chili - sliced A handful of tenderstem broccoli - chopped 1 carrot - chopped Splash of soy sauce 1 tbsp of brown sugar 1 tbsp of tomato puree 3 eggs - beaten 450g of cooked noodles 1 tsp of sesame oil ___ Method: Heat a tbsp of olive oil in a wok or large pan with high sides Add your chicken and fry for 2 mins, then add your chopped garlic and chili Fry for another 2 mins and add broccoli and carrot Stir this in before adding a generous splash of soy sauce, brown sugar and tomato puree and stir this in Leave this all to fry for 3-4 mins before setting aside and returning your wok to the hob Wipe the wok down with a paper towel, add a tsp of of olive oil to the wok and then your beaten eggs Cook the eggs for a couple mins until you are left with scrambled eggs, then add your noodles and the chicken and veg back to the wok Add a splash of sesame oil before mixing everything together Garnish with some sesame seeds and enjoy!
