Low Fat Mac n’ Cheese

Holy macaroni... start your night off right with this deliciously creamy low fat mac n' cheese

"I've worked this recipe out so it's macro friendly but still bangs like a traditional mac n' cheese! (and trust me, it bangs!)"

Ingredients: 1 tbsp of extra virgin olive oil 300g of chicken breast - diced 3 cloves of garlic - finely chopped 1 tbsp of Oregano 3 tbsp of plain flour 1 tsp of smoked paprika A few cracks of black pepper A crack of salt A pinch of cayenne pepper (optional) 1 pint of skimmed milk 100g of low fat cheddar - grated 300g of macaroni - cooked A handful of steamed spinach ___

Method: Boil a large saucepan of water and add Macaroni pasta (cook according to the instructions on the packet) Heat tbsp of olive oil on a medium heat Then, add chicken and cook for 5 mins, stirring occasionally Add garlic and oregano to the pan, stir in and cook for another 3-5 mins Once cooked, set the chicken aside and add tbsp of flour to frying pan along with paprika, pepper, salt and cayenne pepper Whisk the flour and spices together and then gradually start to add your milk Keep whisking the flour and the milk together, on a medium heat, and try to remove any lumps Continue to whisk whilst gradually adding the remaining flour and milk Once there are no lumps and you are left with a smooth white sauce, add your cheese and stir it in Once the cheese has melted into the sauce, add your chicken and cooked pasta and stir in Add steamed spinach and season with more black pepper to taste
